To report on employees' documents you can create an Insight report built on the Core Document Detail View (Time) which has a list of all documents on the system.

By adding a filter Personnel No Is not blank the report will return all documents that were uploaded against employees' records.

You can also filter your report by Document Type Description, Document Type and etc.
